One of the biggest dilemmas of cooking for one to a few people is what to do with the leftovers. What D & I have gotten into the habit of doing is while serving up our meal continue to serve the left overs into a separate microwaveable container for each serving. By the time you have finished eating/cleaning up it should be cool enough to put in the fridge. When you are ready to eat simply pull out a container (or the number of people eating), put in the microwave and enjoy. Your only dish is the Tupperware and any utensils . I am all about minimizing dishes though you would never believed this if you ever watch me cook.
Then since your pan isn't sitting in the fridge you can tackle those tuff to clean pots/pans immediately. And since you won't be cooking for a few days enjoy a semi-clean kitchen before it explodes again (as that is what happens regardless if I am preparing cereal or a gourmet meal). Or if you are lazy, like I am, wait to clean your kitchen until the next day when I know I won't be cooking. ;)
Also, as I am not a fan of eating the same thing over and over, I try to mix things up. On days where I have the time to cook or use the crock pot, I will make something different. For example, I typically have more time on Saturday and Sunday to spend in the kitchen So I will typically make something Saturday and Sunday and switch up the leftovers over the next week. Or will make something over the weekend and use the crock pot early on in the week. It is totally up to you and what works for you.
